Parmesan Garlic Carrot Spirals.

In an effort to cook for myself a couple nights a week and be a wee bit healthier I naturally ventured to Trader Joe’s in order to scoop up some of the easiest possible things to cook. Remembering that my friend Brooke of the Tony Townie being excited about cooking with carrot spirals, I scooped up a box and popped them in my freezer where they sat for a good while. Until finally last week when I pulled them out to get inspired and maybe ease up on the carbo loading, if only for one night.

These puppies actually turned out to be delicious and a much better pasta substitute than I could have ever imagined. Which got me inspired to share this insanely easy recipe for parmesan garlic carrot spirals - inspired by Kirbie’s Cravings Roasted Carrot Noodle Recipe I dumbed mine down even more, for a lightening fast, tasty meal.

Parmesan Garlic Carrot Spirals

Prep Time: 5 Minutes Cook Time: 10 Minutes Servings: 1-2

Ingredients:

Trader Joe’s Carrot Spirals (1 box)

Minced Garlic (2 tablespoons)

Shaved Parmesan (1/4 cup)

Parsley Flakes (1/2 tablespoon)

Olive Oil (2 tablespoons)

Crushed Red Pepper (to taste)

*disclaimer - you can make the same recipe by spiralizing your own carrots, mincing your own garlic, chopping fresh parsley and shaving fresh parmesan - I’m sure it will be tasty and delicious, but this was quite yummy too, and took less than 20 minutes - perfect for a meal for one at home!

Directions:

  1. Heat olive oil in a pan on medium heat for about a minute, then add carrot spirals, let cook for

    1-2 minutes

  2. Mix in minced garlic and crushed red pepper and let simmer for about 8 minutes stirring occasionally

  3. Stir in half of shaved parmesan allowing it to melt and mix in

  4. Top with parsley and remaining parmesan

  5. Enjoy, that’s literally it, so easy!

For me, for dinner on my own, I was able to eat the entire serving having no other side dishes, but I think this would also make for a great side, or would be deliciously bulked up cooked with chicken if you were cooking for two people.
